Birthday Brownies!
Today is Anthony’s birthday! In honor of his birthday i baked him brownies. Why? Because he likes them! This also marks my first ever blog post on CBD!
I have incorporated coffee into the recipe because if some of you do not know…
Coffee + Chocolate = Good idea!
Many Coffees have chocolate undertones like Costa Rican Tarrazu & Sumatra Mandheling, I decided on Dark Costa Rican because I like the flavor of dark roasted beans when baking. Now if you don’t have this particular bean don’t sweat it just use whatever bean is your favorite.
After my awesome boyfriend Jeff made us veggie pizza for dinner I got down to brownie business. I’ve included a picture of the pizza because it was so darn pretty.
Now for the good stuff! First preheat your oven to 325º F. This part was not so fun, it was humid last night and i do not have air conditioning in my kitchen so it got really hot.

First we are going to need 3 oz of semi sweet chocolate chips. You can use fancy chocolate if you like, but all I had was chips so thats what I used. Most bags of chips are 12 oz so I just eyeballed 1/4 the of the bag. It does not have to be exact this is brownies we are talking about the more chocolate the better!
Next we are going to need 1 cup (2 sticks) of unsalted butter. I melted it over the stove over medium low heat to just below boiling. Then pour the butter over the chips and let it sit for about a minute.
Stir the chocolate butter mixture till the chocolate is completely melted it should look nice and shiny!
Next add 1 cup SIFTED sugar and 1/2 cup SIFTED Coco powder to chocolate buttermixture. Stir to combine.
Next we need 1 Tablespoon of Ground Coffee. You are going to have to grind it very fine like a Turkish Grind.
Now stir in 1 Tablespoon boiling water into the coffee and mix till you have what looks like a runny paste. (This is sort of what the bottom of Greek and Turkish style coffee looks like.)
Next stir the coffee into a half a cup of mascarpone cheese. Mascarpone cheese is a triple-cream cheese made from Crème fraîche.
We are going to need 3 eggs (at room temp) and 2 teaspoons vanilla extract. Note: I doubled this because i was making it for everyone at CBD thats why there is six eggs not three.
Now beat in mascarpone cheese,eggs and vanilla with wooden spoon. Next fold in 1/2 cup SIFTED flour and salt (I forgot to sift! Make sure you do it or you will have lumps! You do not, I repeat DO NOT want lumps!).
Pour into greased 8 x 8 glass baking pan. Note I doubled the recipe so I used a bigger pan.
Bake for 40 – 50 minutes. Until a toothpick inserted in the center comes out clean.
I cut these babies into little squares and dusted with powdered sugar.

Mascarpone Brownies

1 c. unsalted butter
3 oz. semi-sweet chocolate chips
1 c. sugar sifted
1/2 c. cocoa powder sifted
1/2 c. mascarpone cheese, softened
3 large eggs, room temperature
2 tsp. pure vanilla extract
1/2 c. all-purpose flour sifted
1/4 tsp. salt
1 Tablespoon coffee (ground very fine)
1 Tablespoon boiling water
Directions
Preheat oven to 325° F. Grease a 8 x 8 pan
Place chocolate in a medium bowl. Melt butter over medium medium heat until almost boiling. Stir into chips, let sit about a minute. Stir until all chips are melted.
Add sifted sugar and coco powder. Stir to combine.
In separate bowl place ground coffee and add boiling water, stir to combine. Add coffee mixture to mascarpone cheese stir to combine.
With a wooden spoon, beat in the mascarpone cheese mixture, eggs, and vanilla. Mix until smooth.
Gently fold in sifted flour and salt.
Pour batter into prepared pan and spread evenly. Place in preheated oven and bake 45 to 50 minutes, or until toothpick inserted in the center comes out clean. Let cool.
Dust with powdered sugar and cut into squares.
